Andrew and I made vegetarian sloppy joe sandwiches for our tea tonight (Kate and Beth had already eaten). First time I’d made them, and rather good.
We fried chopped onions and peppers with a bag of Quorn mince, then added half a pint of Heinz ketchup, a couple of teaspoons of brown sugar, a teaspoon of garlic powder, a teaspoon of yellow mustard, and salt and pepper. After simmering for a while, we served the slop in toasted sesame burger rolls, with American-style “cheese” slices, and coleslaw on the side. Mmm. Beth ate a fair bit of mine as her “pudding”.
